with Creamy Feta Dressing
This is a one-bowl Middle-Eastern feast that’s positively bursting with flavor. The base is a lemony bulgur salad with cucumber, tomato, scallion whites, and dill. On top, there’s crispy, Momma T's spiced chickpeas, bell pepper, and a drizzle of creamy feta dressing. It doesn’t get much better than this!
INGREDIENTS
• 1 Bell Pepper - any color
• Momma T's Garam Masala — 1 tablespoon
• Salt (to taste)
• 1 can Chickpeas
• 1 Cucumber
• Scallions - 1/2 cup
• 1 Lemon
• Feta cheese - 1/2 cup
• Cracked bulgur - 1/2 cup
• 1 Roma Tomato
• 1/4 oz Dill
• Sour Cream - 4 tablespoons
