Masala Mac 'n' Cheese

the perfect comfort food with a twist


This delicious rendition on your favorite comfort food is a sure winner. With Momma T's Garam Masala and a bit of Sriracha -- give your mac 'n' cheese the kick it needs bring it to the next level.


INGREDIENTS


• Whole Milk  — 1 cup

Momma T's Garam Masala — 1 teaspoon

• Salt (to taste)

• Shredded Cheddar Cheese  — 1 1/4 cup

• Butter — 1/4 cup

• Panko bread crumbs — 1/4 cup

• Diced red onion - 1/2 onion

• Sriracha Hot Sauce - 1 teaspoon

• All purpose flour — 1/2 cup

• Water — 1 cup

• Pepper — 1/2 teaspoon

• Cooked macaroni pasta — 1 1/2 cup

• Chopped green onion (optional)


HARDWARE: Large Pan, Baking Dish, Small Bowl


Instructions

[1] Pre-heat the oven to 400 degrees. First heat up (medium-high heat) a non stick pot with 1/2 cup of butter and wait till it all melts. Now add diced onions to the pan with Sriracha Hot Sauce and stir lightly till onions caramelize.


[2] Add all purpose flour to this and mix well.


[3] Add some water to loosen up the mixture and boil it for 5 minutes on medium to low flame. Do not burn the flour!


[4] Add Momma T's Garam Masala and whole milk using whisk to break any lumps until smooth and consistent.


[5] Increase heat slightly and add most shredded cheese (save for garnish) and continue to stir until creamy. Please turn down the heat slightly after 2-3 minutes to ensure mixture does not burn.


[6] Spoon all cooked macaroni pasta into baking dish evenly. Spoon béchamel sauce(milk gravy) on top of pasta and sprinkle remaining shredded cheese.


[7] Mix melted butter and Panko bread crumbs in small bowl and sprinkle on top of pasta. Place dish in the oven for 25-30 minutes.


[8] Once complete, allow dish to cool before serving. Garnish with black pepper + green onion and cut with spatula + serve!
